Poorna kolukattai

Kolukattai is a popular aromatic and delicious dish. You can try making this amazing Kolukattai in your kitchen. Delicious soft kozhukattai recipe made using raw rice. It is so easy to make and so delicious to eat. Perfect for breakfast too. This has become one of my favorite kozhukattai, it was so soft in texture and i loved the taste of that too. Kozhukkatai is also one among the most popular Kerala sweet which is prepared from rice flour, grated coconut and jaggery. The dough for Kozhukkatai is made similar to that of Idiyappam.This is a special recipe for Palm Sunday.

Ingredients

  • P. J. T Rice flour – 1 cup.
  • Water – ¾ to 1 cup.
  • Jaggery – ½ cup.
  • Cardamom powder – ½ tbsp.
  • Coconut – ½ cup [grated]
  • Bengal gram – ½ cup.

Preparation

  • Wash & soak Bengal gram overnight.
  • In a bowl, take rice flour with water make it idli batter consistency without lumps.
  • Heat Pan, Pour batter and stir continuously and cut off heat when it becomes chapathi dough consistency.
  • Divide the dough into equal size balls. Then grease finger with oil. Give pressure at the center, rotate and make it bowl shape. Fill with Poornam. Fold & Seal it and you would get half circle shape.
  • Steam for 5 min. Then serve hot.

Seedai

Uppu Seedai is a traditional recipe made during the festival of  Gokulashtami. This festival is the most popular festivals amongst the Hindus. The Uppu Seedai and the Vellai Seedai are made on this special festival for the Lord Krishna.

Ingredients

  • P. J.T Raw Rice flour(Pacharisi mavu)- 2 cups
  • Urad dal flour – 3 tsp
  • Butter – 11/4 tbsp
  • Grated coconut – 2 tbsp (optional)
  • Chilli powder -1 tsp
  • Hing – 1/4 tsp
  • Salt as required
  • Oil for deep frying

Preparation

  • Mix well rice flour, urad dal flour, grated coconut, butter, chilli powder, salt and hing first.
  • Then sprinkle water and make a smooth dough. Do not add too much water.
  • Now grease your palms with oil and make small balls roughly from the dough.You do not have to make fine smooth balls. Make small sized balls (see pic below), so that it will get cooked well inside.
  • Spread the balls in a cloth for 10 minutes to dry if required.
  • Heat oil in a kadai, add a small ball of seedai, if it comes to the surface, the oil is hot enough to fry the seedais.
  • Now keep it in medium flame, drop a handful of balls gently into the oil and fry the balls.
  • Keep stirring so that it will get cooked evenly.
  • Once the frying sound subsides, remove the seedais with a slotted ladle and transfer to a colander to drain the excess oil.
  • Yummy and crunchy seedais are ready. Store it in an airtight container.
