Boondi Laddu

A treat for the sweet tooth, the Oats and Mixed Nuts Ladoo is made with a nutritious combination of oats, jaggery and nuts. This easy to make snack is best had fresh, or it might turn a bit dry. Whenever you wish to cook some Healthy Snacks or some Sweet Treats for your kids, Oats and Mixed Nuts Ladoo is the perfect choice. Ladoo (Boondi ke Laddu) is a very famous Indian dessert, usually made during festive times like Diwali or at Indian weddings. A sweet treat with cashews, raisins, saffron and the light flavor of cardamom.

Ingredients

  • P.J.T Gram flour-500 gm
  • Water or Milk-1 liter
  • Ghee-750 gm for frying
  • Sugar-750 gm
  • Orange color-10-12 drops.
  • Flakes saffron-10-12 soaked in little water.
  • Chopped cashew nuts-50 gm.

Preparation

  • Take gram flour in a sifter and sieve it. Add in water and mix to a smooth batter.
  • Add in water slowly and make it into a smooth batter. Now add in some baking soda and food colouring. Mix well. The batter should be little thick, it should be thinner than bajji batter.
  • Make the batter perfectly then only you will get round boondi.
    Now heat oil for deep frying.
  • Now take a boondi karandi or a perforated ladle. Hold it over oil.
    Pour a ladleful of batter over the karandi and spread it out. The boondis will fall drop by drop.
  • Fry the boondi till they are little soft. Drain them and set aside.
  • Take sugar and water in a pan, mix well so it is melted. Bring it to a boil and cook till it attain a single string stage. When you take the spoon from the syrup and see, the last drop falling from the syrup form a single string like consistency.
  • At thispoint, take it off the heat and add in cardamom powder, clove powder, food colouring and mix well.
  • Now take boondis in a bowl, add in the sugar syrup and use the back of a big ladle to bash the boondis so it gets little mashed up.
  • Now Heat ghee in a small pan, add in cashews and fry till it is light golden, add in raisans and fry till golden, add in cloves and mix well.
  • Pour this over the boondi and add in sugar candy. Mix well.
    Take a small portion of this mix and shape it into a tight ladoo.
  • Do this for all the mixture. Let this set for 2 to 3 hours untill it gets firm. Then Serve.

Ingredients

  • P.J.T Gram flour – 1/2 cup
  • Water – 1/2 cup
  • Ghee – 2 cups
  • Sugar – 2 cups
  • Oil – 1/2 cup

Preparation

  • Mix besan gram flour with hot oil and sieve it.
  • Take sugar in thick bottomed saucer, add water and let it boil to form sugar syrup ( till it comes to a soft ball stage when a drop poured in a water bowl).
  • Heat oil and ghee (till it melts ) in a pan.
  • Now add the gram flour gradually to the sugar syrup and stir it all the while so that no lumps are formed.
  • Then add the above hot ghee and oil mixture to the flour and stir it continuously till the mixture starts bubbling.
  • Continue this process till all the ghee is consumed and there is a pleasant sweet roasted aroma.
  • Pour the mixture into a greased tray and Cool a little and cut into squares.
  • Separate the squares when completely cooled and enjoy your Mysore Pak.
